Mini Bites!

I think I've found the perfect sized cupcakes!

For me at least.. and the kids at the boy's school. Em' mini cupcakes! I'm sure you've seen them around. Mom bought 2 mini cupcake trays ages ago. Haven't actually used them because I'm just so used to baking 'real' sized cupcakes.

So it all started one fine weekend when the husband asked for his 'healthy donuts'.. Yeah, real healthy I tell you. In fact, it's too healthy that even I don't take them. It has protein powder, casein powder and egg whites in them.

These are another version of his healthy snacks. The PROTEIN CUPCAKE! 
Well, the only 'sweet' element is probably on the so called chocolate drizzle. Haha, I wouldn't really call it 'drizzle'! More like, slob of melted chocolate poured onto the donuts. ANYWAY, finished making them about 10pm on a Sunday night. The son asked where was his cupcake?

Me: Eh? Tak cakap pun nak buat..

What is a mother to do when your boy sulks then? Obviously promising the world and that you'll wake up early (should be around 4.30am) to make him cupcakes to bring to school, so he can share it with his friends.

I woke up at 6.30am..

My heart broke when after work that day (Monday), when I greeted him his first question was, "Takde cupcakes pun?". So yeah, don't just simply promise the world ok? So anyway, I was determined to make the cupcakes happen the next day! I woke up at 3am! And I used the mini cupcake muffins as they were so cuteeeee and small, PERFECT for his friends little fingers!

I think what I love most is the ability to produce 48 cupcakes with just a single batch! 
So for a friend's daughter's birthday do, decided to make more of these mini bites. Orange cupcake with chocolate frosting, and salted caramel cupcake. Mind you, I only manage to frost these after work, an hour before we had to leave for the party.

So I decided to spare you the pictures of the ugly frosted finish cupcakes, and show you the unfrosted ones made a day earlier. I foresee more of these mini bites in the future!
