Hey hey hey! I think after a few (gazillion) macaron batches, I think I'm starting to get a hang of it. Especially in terms 'under-mixing' and 'over-mixing'..
It's a fine line between the two. Although I am still trying to get it consistently right every time, I'm slowly developing a feel for it.
So basically there are two methods for making these awesome looking yet super finicky sensitive cookies i.e french and italian. I am not a super expert in either methods, but the Italian method so far has given me consistent results (look at em' gorgeous beauties!)

For now, let's play with different flavors shall we? Featured below is chocolate ganache (left) and rose (right). Super love the shade of red that came out. Real life it looks a bit 'salmon'ish but with strong red undertones.
I speak of colors as if I know them.
NOT! I just know that it's fun to make super colorful macs! Yes, I'm still at the one color per batch phase... (tried splitting and ended up over-mixing.. huhu) but so far I find that I am able to freeze the ones I'm not using for that particular order, and combine them with the new ones of the next order. Boom! two different colors!
Featured below are the ones for an order today (1 of 2 boxes!). Woot! Found the perfect box to fit 20 macs. Just nice :)
